A collaboration worth getting fired up about
This winter, OTTO Ristorante on the Woolloomooloo wharf is running a limited-edition collaboration with The Ben Buckler, built around one standout dish and one standout drink. It's here for a short time only. When it's gone, it's gone.
The dish
At the centre of it is OTTO's grass-fed O'Connor Rib-Eye, aged for four weeks with The Ben Buckler Single Malt. The whisky ageing brings out deeper flavour, with subtle notes of oak, vanilla, caramel and spice. It's finished over charcoal and whisky barrels, then served with a silky whisky sauce, a proper showcase for what the whisky itself tastes like, just plated.
The cocktail
Pair it with The Fig Lebowski, OTTO Bar Manager Michal's take on The Ben Buckler, a smooth mix of the whisky and fig liqueur, made for a sweet finish to the meal.

This isn't whisky as a garnish, it's whisky as the main event: aged into the beef itself and mixed into a cocktail built specifically around it.
